Chickpeas are high in protein, fiber, iron, folate, and B vitamins. What’s great about chickpeas is that they can take time to cook due to their thickness, and then can be stored up to three months before eating them.
1) Chickpeas are commonly known as garbanzo beans. These tiny little green pods resemble peas, but they are actually related to the fava bean. They have been consumed since ancient times and were originally cultivated in India.
Garbanzo beans are grown worldwide and are often called chickpeas. Their popularity increased over time due to their versatility. They are rich in dietary fiber and protein and provide excellent nutrition. They may not be the first food choice of some people, but they make a great addition to any diet!

Ingredients: Chickpeas: Indian Chickpea Curry Vegan Recipe
- 1 cup chickpeas
- 2 cups water (additional)
- 1/4 teaspoon salt
Preparation: Chickpeas: Indian Chickpea Curry Vegan Recipe
1) Soak overnight chickpeas in water.
2) Drain the beans and put back in pot and cover with fresh water. Add salt. Bring to boil. Reduce heat and simmer over low heat until soft, about 45 minutes. Drain beans well, reserving cooking liquid.
3) Add desired amount of cooking liquid to cooked beans. Mash some of the beans. If not eating immediately, store in airtight container for up to 4 days.
