 Channa Masala Recipe Kabuli Chana- Channa masalas are delicious dishes made out of dry chickpeas (also known as channa). There are many variations of channa masala recipes from different regions across India. One thing they have in common though, they are all loaded with spices!

Chana Masala is a popular South Indian dish consisting of chickpeas, spices, coriander seeds, cumin, black pepper, red chilis, ginger garlic paste with turmeric and garam masala. This mixture tastes delicious when cooked with basmati rice.

You may even substitute basmati rice with any other type of rice if you prefer. I personally love making chana masala with brown basmati rice. India's cuisine is as diverse as its culture and terrain. This variation is primarily due to ancient interactions and trade with other neighboring countries.

Persia, ancient Greece, the Mongols, and West Asia all had a strong influence. Each region of India has its own cuisine and cooking style. This is primarily determined by its staple foods, spices, and the specific types of vegetables grown in that region.

 Ingredients

 • 1/2 cup (120 ml) yogurt

 • 2 tsp lemon juice

 • Salt to taste

 • 6 cups (1.5 L) water

 • 4 tbsp oil

 • 1/4 cup (35 g) onion chopped

 • 1/2 tsp cumin seed

 • 1 tsp coriander seeds

 • 1.25 inch (3 cm) piece ginger root peeled & grated

 • 5 green chilies chopped

 • 4 cloves garlic finely chopped

 • 2 tsp red chilly powder

 Method:

 Soak chanas overnight. Drain water and grind them in mixer grinder along with green chilies, ginger, garlic and little salt. Add few drops of white vinegar and mix well. Heat oil in frying pan and add cumin seeds. When they start sputtering put the mixture in it and mix well.

Turn off flame immediately otherwise spices might burn. Sauté until oil separates  out and then transfer the same to a pressure cooker. Cook till dry. Serve hot with roti.

 This is excellent for people who have allergies to onion. Also good for weight loss. A glassful of Chana Masala after breakfast helps in losing weight.
